Safflower

Safflower

Safflower is a highly branched, herbaceous, thistle-like annual plant that typically grows from 30 to 150 centimeters tall. It features bright yellow, orange, or red flowers that have historically been used for coloring and flavoring foods, as well as making dyes. Cultivated primarily in arid and semi-arid regions around the world, safflower is valued heavily for the vegetable oil extracted from its seeds, which is rich in polyunsaturated fatty acids. The plant adapts exceptionally well to dry climates due to its deep taproot system, which allows it to extract moisture from deep within the soil profile. Beyond its agricultural value, safflower has a long history of utilization in traditional medicine systems and continues to be an important crop for industrial oil and organic textile dyeing applications.
