Yuzu

The yuzu is a citrus fruit and plant of the family Rutaceae, originating in East Asia. Yuzu is thought to have originated in central China as a wild hybrid of the mandarin orange and the papeda. It is cultivated extensively in Japan, Korea, and to some extent in other parts of the world. The fruit looks somewhat like a small grapefruit with an uneven rind, and can be either yellow or green depending on its degree of ripeness. Yuzu fruits are very aromatic, and are tart in flavor, commonly used in Japanese cuisine for their zest and juice. The plant itself is a hardy, upright shrub or small tree often featuring prominent thorns.
