Common Quince

The common quince is a small deciduous tree that bears a hard, strongly perfumed, and tart golden-yellow pome fruit, similar in appearance to a pear. Native to the rocky slopes and woodland margins of southwest Asia, it is widely cultivated in temperate regions around the globe for both its striking pink-tinted white flowers and its aromatic, edible fruits. Although raw quinces are typically too hard and sour to be consumed directly off the branch, they undergo a remarkable chemical transformation when cooked, turning deep red and developing a rich, floral, and intensely sweet flavor profile that makes them exceptionally popular for jams, jellies, and traditional pastes.
