Cardoon

Cardoon is a large, thistle-like perennial plant belonging to the daisy family, Asteraceae, and is closely related to the globe artichoke. Native to the Mediterranean region, it features striking, deeply lobed, silvery-green leaves and large, vibrant purple-blue flower heads that resemble those of its edible cousin. Traditionally cultivated for its thick, fleshy leaf stalks, cardoon has a distinct, earthy, and slightly bitter flavor profile reminiscent of artichokes.
