Cardoon

Cardoon, scientifically known as Cynara cardunculus, is a striking thistle-like perennial plant belonging to the daisy family Asteraceae. Closely related to the globe artichoke, cardoon is primarily cultivated for its large, edible leafstalks, which are blanched before harvest to reduce bitterness. The plant features deeply lobed, silvery-green leaves covered with fine spines, and produces large, vibrant purple-blue thistle-like flower heads. Thriving best in Mediterranean climates, cardoon requires full sun, rich well-drained soil, and adequate moisture to reach its impressive full height of up to two meters. Beyond its culinary uses in traditional European dishes, cardoon is valued as an ornamental specimen in gardens due to its architectural foliage and striking blooms.
